Meet the Founder: A Passion for Chocolate, A Story of Resilience
Choco Brst was founded by Jessica Birkle, a lifelong dessert artist with a deep passion for crafting unique, high-quality confections. Her journey in the world of desserts began nearly 20 years ago when she opened a cake and cheesecake shop, earning a reputation for her meticulous attention to detail and innovative flavors.
Formally trained at a culinary school in Fort Wayne, Indiana, she honed her skills in baking, cake decorating, and flavor development. Over the years, she continued making cakes and cheesecakes for friends, family, and special events, always pushing the boundaries of what desserts could be.
For the last five years, she worked alongside her husband, Joey Birkle, as the VP of Mortgage Lending while also raising their two children, Hallie (20) and Brady (16). But in 2022, life took a different turn when she became the primary caregiver for her mother.
During long nights in hospital waiting rooms, she found solace in something that had always brought her joy—creativity. During quiet moments, she began developing recipes, experimenting with chocolate tempering, and sketching out plans for what would eventually become Choco Brst. It was in those moments that she realized:

The Brst Bar: A One-of-a-Kind Chocolate Experience
At Choco Brst, our signature product is the Brst Bar—a handcrafted filled chocolate bar featuring decadent layers of ganache, creams, and cookie crusts. Every month, we release a new limited-edition menu of Brst Bars, each inspired by unique flavor combinations that push the boundaries of traditional chocolate.
Each Brst Bar is meticulously crafted in a multi-step process that takes hours to perfect. From the hand-polished molds to the temperature-sensitive chocolate tempering and intricate decoration techniques, every bar is a work of edible art.
